Carrot Thogayal /Carrot Chutney

                     Carrot Thogayal is a healthy recipe which I learnt from one of my friend in a potluck get together.It is like any other thogayal but with carrot as the mail ingredient. Since carrot is a  sweet vegetable, we might have to add more chillies to bring the thogayal taste to mix it with rice and eat. It also goes well with idli or dosa .




Ingredients:

Carrot- 2 grated.
Red chillies :6-7 long chillies
Asafoetida - Generous pinch
Urad Dal- 2 tbsp
Channa Dal -1 tsp
Grated coconut - 3 tbsp

For  Seasoning:


Mustard -1 Tbsp
Curry Leaves -few strands
Red Chilli -1 or 2

Method :

1) With oil heated in a kadai, add the mustard seeds to splutter ,To this add the urad dal and channa dal and fry golden brown.

2) Dry fry coconut gratings to light brown color and keep it aside.Add this in a mixture along with the dals and grind it to a smooth paste with little water.

3) Saute the grated carrot for 2 -3 mins till the raw smell goes away.Add this to the ground mixture and grind everything together to a smooth paste.

4) Season the thogayal with mustard, curry leaves and red chillies on the top.
